Salisbury Steak

I was one of those kids that always looked forward to eating hot lunches at school. There were very few of the meals that I didn’t like. One of my favorite meals was the Salisbury Steak and mashed potatoes. As I got older I continued to find ways to get my Salisbury steak fix at first through frozen TV dinners, then on to lean cuisines and now I found a recipe for it. I feel like this recipe is a gourmet version of Salisbury Steak. It was a lot like making meatloaf. Next time I make this I am going to take out the frozen hash browns and serve it over mashed potatoes instead, but it was still good with the hash browns. Half the recipe made three patties and plenty of veggies. Each patty was 333 calories. Happy Eating!

Salisbury Steak

Ingredients:

Patties
2 slices soft white sandwich bread, crusts removed, cubed
1/4 cup finely chopped onion
1/4 cup finely chopped fresh parsley
1 egg
1 tbsp onion soup mix
1 tbsp tomato paste
2 garlic cloves, pressed
1 tsp Worcestershire sauce
1 1/4 lbs 90% lean ground beef (I used 96%, 4%)
1 tbsp olive oil

Vegetables & Sauce
2 medium carrots, peeled
1/2 cup diced onion
3 cups frozen O’Brien potatoes
2 tbsp tomato paste
1 pkg (8 oz) sliced mushrooms
1 can (14.5 oz) beef broth
3 tbsp onion soup mix

Directions:
1. For patties, combine bread, onion, parsley, egg, soup mix, tomato paste, pressed garlic and Worcestershire sauce in Stainless (4-qt.) Mixing Bowl; mix well. Add beef; mix well. Shape beef mixture into six oval-shaped patties, about 1/4 in. thick. Add oil to (12-in.) Skillet; heat over medium-high heat 1-3 minutes or until shimmering. Place patties in Skillet; cook 3-4 minutes on each side or just until browned. Remove patties from Skillet; keep warm.

2. For vegetables and sauce, dice carrots and onion. Add potatoes to Skillet; cook 4-5 minutes or until beginning to brown. Add carrots and onion; cook 4-5 minutes or until crisp-tender. Stir in tomato paste. Add mushrooms; cook 3-4 minutes or until mushrooms begin to soften. Add broth and soup mix; bring to a simmer.

3. Add patties back into Skillet. Reduce heat to medium; simmer 4-6 minutes or until centers of patties are no longer pink and internal temperature reaches 160°F.
